Serves 10 – 12 as a salad, 6 as a light meal.
- dash of olive oil
- 1 onion, chopped
- 1 pack bacon, cut into small pieces
- 1 clove garlic
- 1 head of broccoli
- 1 head cauliflower
- 50 grams cheese, grated
- 50 grams feta cheese, chopped (you can add more cheese to make it yummier)
- 150 ml plain yogurt
- 50 ml mayonnaise
- salt & pepper to taste
- 1 tablespoon wholegrain mustard
- 1 tablespoon thin honey
- blue cheese, crumbled
- 2 tablespoons sunflower seeds
Heat olive oil in a pan, and add onions and garlic. Let them catch and brown a little while you slice up the bacon, and add to the pan when you are ready.
While that cooks, start chopping broccoli and cauliflower into small pieces (about the size of a fingernail), including the stems but get rid of any leaves. I like doing this part in front of the TV cause it takes a while. Once you have finished chopping everything up, pour boiling water over the pieces and let it soak for a while.
In the meantime, make the sauce by mixing yogurt, mayo, mustard, honey, salt and pepper. Drain the water from the veggies and pour into a bowl with the onion and bacon, and cheese (including feta). Pour sauce over the veggies and stir until lightly mixed. Sprinkle blue cheese and sunflower seeds on top, to make it look pretty.
Serve as a light meal, as a pack lunch during the week or as a side dish at a braai.
