Quick Butter Chicken

I’ve always loved Butter Chicken, but don’t really have the patience for the time consuming process that making it requires. Like any true South African, I love Woolies convenience, and often rely on their spice packs when I want to cook a quick and easy meal. However, in true Nina fashion, I never follow the directions on the box and like to add my own touch, by chucking in a few extras until it looks pretty. I’ve experimented a bit, and have now settled on this winning combination.

  • 1 onion, sliced
  • 1 tablespoon coconut oil
  • 2 cloves garlic
  • 1 teaspoon finely grated fresh ginger
  • 1 Box of Woolworths Butter Chicken Spice
  • 1 tin tomato paste
  • 1 tin hot water
  • 1 teaspoon green curry paste
  • 1 tablespoon honey
  • 1/4 – 1/2 teaspoon chili flakes
  • 1 pack of chicken breasts, sliced
  • 1/2 cup plain yoghurt

Heat oil in a medium pot/wok and add onion, garlic and ginger. Once it starts to soften, add the spices and cook for a few minutes. Add the tomato paste, then fill the same tin with hot water, and add. After a few minutes add curry paste, honey and chili flakes. Once this has simmered for a few minutes add the chicken and cook over medium heat. Lastly, add the yoghurt and heat through. I don’t like to let the yoghurt simmer for too long as it can separate.

Serve garnished with fresh coriander and basmati rice.
