The husband came home with sooo many bottles of OBS a while ago (he won them at a work function), and at total loss for what to do with them I went searching for recipes. I originally found this in the Camps Bay Family Meals recipe book (which was given to me by an aunt) and tweaked it a few times until coming to the final result below. Quick, easy and delicious.
Serves 4
- 1 onion, chopped
- 3 cloves garlic, crushed
- 3 potatoes, cubed
- 8 chicken portions (I prefer thighs and legs), coated with cornflour
- 1/2 cup soya sauce
- 1/2 cup sherry
- 1/2 cup water
- 1/4 cup brown sugar
Heat oven to 180 º C. Place all ingredients in an oven-proof dish in order listed. Bake for 1 hour, turned pieces at least twice.
Serve with brown rice and veg.
